The vineyard


The Champagne House Michel Fagot is the owner of a vineyard of 15 ha on the ‘Grande Montagne de Reims’, classified first quality vineyard. On the hillside facing southeast, the vines Pinot Noir and Pinot Meunier look especially for delicacy.
Surrounded by splendid and huge forests, its soil is made of this unique ground mingled with plants, chalk and sand.
At a few kilometre of the smiling angel from the cathedral of Reims, our house constitutes a real charming stopping place in Champagne.
Before flying out the corks under the Christmas tree, it is time to learn everything about this precious nectar.

ENVIRONMENT

Reasoned wine growing

The third millennium or 21th century in Champagne corresponds to the setting up of rigour in our vines. Reasoned wine growing is our leitmotiv and your guarantee that the champagne you are drinking is elaborated in the respect of the traditions and of our environment.
The traceability from the vines to the flute is first and foremost the protection of man’s health, a reasoned wine growing with a very strict control at each stage of the work of our land and of our vineyards. From the cultivation of our vines to the bottle on your table, our house cares for all these stages; for you it is an essential guarantee of a protected environment and of a high-quality product.

 

Agricultural planning and establishing of the vineyard are very important stages for these operations have a lot of long-term consequences. In reasoned wine growing, there are a lot of targets  :

  • To protect environment, the biodiversity of the viticultural environment and the quality of the soils ;
  • To consider and prevent the natural risks (erosion, landslides)  ;
  • To protect the aesthetic and the image of the viticultural landscapes  ;
  • To allow longevity, stable development and the maximum expression of the terroir and of the natural defences of the future vine
 

The Cellar

Our cellars at the place named “Le Village” spread under the farm buildings. They were built at the 19 th century, at more than 15-meter depth, in the chalk. They allow thus our champagnes to improve and to evolve at a constant temperature of 12°C. The bottles are kept in a heap on laths during many years: between two or three year for the brut without year en until 8 year for the vintages.

The riddling consists in turning the bottles from 1/8 or 1 /4 left or right, from a stroke of chalk drawn on the neck, righting it progressively from the horizontal to the vertical. Those successive balancings, reproduced for centuries by the riddling cellar men allow the big sediment to pick up the little particles and by this way to obtain a perfectly limpid wine. On average, a bottle is manually riddled 25 times within a period of one month and a half.

The elaboration of our champagnes is only made of grapes harvest in our property. Our production reaches 200.000 bottles per vintage; our actual stock is three years and a half. Each year, 20 to 25.000 bottles of Champagne Michel Fagot are exported to Germany, England, the Netherlands, Switzerland, Japan and Italy.
